- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter (melted)
- 2 packages cream cheese (16 ounces total)
- 2 large eggs
- ⅓ cup granulated sugar
- 2 cups freshly diced strawberries

- ¼ teaspoon kosher salt
- ¾ cup all-purpose flour
- ¼ cup light brown sugar (packed)
- ¼ teaspoon kosher salt
- 5 tablespoons unsalted butter (melted)
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×9 inch baking dish with parchment paper.
- Combine the graham cracker crumbs, melted butter, and granulated sugar in a mixing bowl. Press this mixture into the bottom of the baking dish.
- Beat the cream cheese in a large bowl until smooth. Add the eggs, granulated sugar, vanilla, and salt; mix until combined and smooth.
- Pour the cheesecake mixture over the crust and spread it evenly.
- Add the diced strawberries on top of the cheesecake mixture evenly.
- Combine the flour, light brown sugar, kosher salt, and melted butter in another bowl until crumbly for the topping; sprinkle over the strawberries.
- Bake for 35 to 40 minutes until the center is slightly jiggly.
- Cool at room temperature, then refrigerate for at least 1 hour before cutting.
