- 1 chuck roast (3–4 pounds)
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the chuck roast in the slow cooker and season it with salt, pepper, and thyme, rubbing the seasonings over the meat.
- Add the chopped onions, minced garlic, carrots, and potatoes around the roast in the slow cooker.
- Pour the beef broth and Worcestershire sauce over the meat and vegetables.
- Cover the slow cooker with its lid and set it to cook on low for 8-10 hours or on high for 4-5 hours.
- Once cooked, remove the roast and vegetables from the slow cooker and let the roast rest before slicing it against the grain.
- Serve the sliced meat with broth ladled over the vegetables.
