  • 1 chuck roast (34 pounds)
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chuck roast in the slow cooker and season it with salt, pepper, and thyme, rubbing the seasonings over the meat.
  2. Add the chopped onions, minced garlic, carrots, and potatoes around the roast in the slow cooker.
  3. Pour the beef broth and Worcestershire sauce over the meat and vegetables.
  4. Cover the slow cooker with its lid and set it to cook on low for 8-10 hours or on high for 4-5 hours.
  5. Once cooked, remove the roast and vegetables from the slow cooker and let the roast rest before slicing it against the grain.
