  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup corn kernels (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Stir well.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Pour the wet mixture into the dry ingredients and stir gently until just mixed. If using corn kernels, fold them in gently.
  5. Grease a skillet and pour the batter into it, spreading it out evenly.
  6. Bake in the preheated oven for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
  7. Allow to cool slightly before serving.

For an extra crispy crust, preheat the greased skillet in the oven before adding the batter. Avoid over-mixing to maintain a tender texture.
