- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup corn kernels (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Stir well.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Pour the wet mixture into the dry ingredients and stir gently until just mixed. If using corn kernels, fold them in gently.
- Grease a skillet and pour the batter into it, spreading it out evenly.
- Bake in the preheated oven for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before serving.
Notes
For an extra crispy crust, preheat the greased skillet in the oven before adding the batter. Avoid over-mixing to maintain a tender texture.
