- 9 lasagna noodles
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 can (28 oz) crushed tomatoes
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef. Add chopped onion and minced garlic; cook until meat is browned and onion is soft.
- Add chopped bell pepper and zucchini; stir and cook until softened, about 4 to 5 minutes.
- Pour crushed tomatoes into the skillet and sprinkle in Italian seasoning; stir well.
- Break lasagna noodles into small pieces and add to the skillet, ensuring they are submerged in the sauce.
- Cover and let simmer on low heat for about 20 minutes, stirring occasionally until noodles are tender.
- Drop spoonfuls of ricotta cheese over the top and sprinkle shredded mozzarella cheese on top.
- Cover again and cook for 5 to 10 minutes until cheese melts.
- Season with salt and pepper to taste, garnish with fresh basil, and serve hot.
