  • 9 lasagna noodles
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can (28 oz) crushed tomatoes
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Add chopped onion and minced garlic; cook until meat is browned and onion is soft.
  2. Add chopped bell pepper and zucchini; stir and cook until softened, about 4 to 5 minutes.
  3. Pour crushed tomatoes into the skillet and sprinkle in Italian seasoning; stir well.
  4. Break lasagna noodles into small pieces and add to the skillet, ensuring they are submerged in the sauce.
  5. Cover and let simmer on low heat for about 20 minutes, stirring occasionally until noodles are tender.
  6. Drop spoonfuls of ricotta cheese over the top and sprinkle shredded mozzarella cheese on top.
  7. Cover again and cook for 5 to 10 minutes until cheese melts.
  8. Season with salt and pepper to taste, garnish with fresh basil, and serve hot.
