- 8 oz Neufchatel cheese (softened)
- ¼ cup Greek yogurt
- ¼ cup maple syrup

Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8 inch baking pan.
- Grate fresh carrots and combine them with eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract.
- Mix the oat flour with baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and sea salt in a separate bowl.
- Combine the dry mixture into the wet ingredients and stir gently until just combined.
- Pour the batter into the prepared baking pan and bake for 20 to 25 minutes.
- Cool the cake completely in the pan before frosting.
- Prepare the frosting by mixing softened Neufchatel cheese, Greek yogurt, maple syrup, and a pinch of sea salt until smooth.
- Frost the cooled cake evenly with the cream cheese frosting.
Notes
