Ingredients

  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 lemon (juiced and zested)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. Heat your skillet: Begin by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Season the chicken: While the oil heats up, season the chicken breasts with salt, pepper, and dried oregano. You can rub the spices into the chicken to ensure better flavor.
  3. Cook the chicken: Place the seasoned chicken breasts in the hot skillet. Cook them for 6-7 minutes on each side until they are golden brown.
  4. Prepare the garlic: Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté for about 1 minute.
  5. Toast the orzo: Add the orzo pasta to the skillet and toast it for 2-3 minutes, stirring frequently.
  6. Add chicken broth: Pour in the chicken broth, stirring everything together. Bring the mixture to a boil.
  7. Return chicken to skillet: Once boiling, return the browned chicken to the skillet. Squeeze in the lemon juice and sprinkle in the lemon zest. Cover and reduce heat to low.
  8. Simmer: Allow to simmer for about 15-20 minutes until the orzo is tender and has absorbed most of the broth.
  9. Fluff and garnish: Fluff the orzo and chicken before serving. Top with fresh parsley or dill.
