- 2 tablespoons olive oil, divided
- 1 boneless, skinless chicken breast
- Salt and black pepper, to taste
- 1 teaspoon minced garlic
- 1 cup broccoli florets
- ½ cup diced zucchini
- ¼ cup asparagus tips
- ¼ cup diced green bell pepper
- 8 cherry or grape tomatoes, halved
- 1 tablespoon Italian seasoning
- ¼ cup heavy cream
- 1 tablespoon grated Parmesan cheese (for topping)
Instructions
- Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package directions until it reaches the al dente stage. Once done, drain the pasta and set it aside.
- Prepare the Chicken: While the pasta is cooking, take the boneless, skinless chicken breast and slice it into thin strips. Don’t forget to season the chicken evenly with salt and black pepper for flavor.
- Cook the Chicken: Next, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the seasoned chicken strips to the skillet and cook for about 4-5 minutes, turning them once, until they are golden brown and fully cooked through. Once cooked, remove the chicken from the skillet and place it on a plate.
- Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the minced garlic and cook for about 30 seconds until it becomes fragrant. Following that, add in the broccoli florets, diced zucchini, asparagus tips, and green bell pepper. Cook this mixture for about 3-4 minutes until the vegetables are tender but still crisp.
- Build the Sauce: Now it’s time to add depth to your dish. Stir in the halved cherry or grape tomatoes along with Italian seasoning. Pour in the heavy cream and stir gently. Allow this mixture to simmer for about 2 minutes until it thickens slightly and develops a glossy finish.
- Combine Everything: Return the golden chicken strips back to the skillet. Add the cooked pasta and toss all the ingredients together until the pasta is evenly coated with the creamy sauce. Heat for another 1-2 minutes until everything is warmed through.
- Serve: Plate the creamy chicken pasta primavera immediately and finish it off with freshly grated Parmesan cheese for an extra touch of flavor.
Notes
Feel free to swap in any vegetables you prefer, use different types of pasta, or add shrimp for variation. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
