- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir well to ensure everything is mixed evenly.
- Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or a wooden spoon until just combined. Itβs okay if the batter is a bit lumpy. Do not overmix, as this can make the pancakes tough.
- Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. You can add a little butter or oil to help keep the pancakes from sticking, if needed.
- Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2β3 minutes. Flip the pancakes carefully and cook on the other side until golden brown, another 1β2 minutes.
- Repeat: Repeat with the remaining batter, adjusting the heat as necessary to ensure the pancakes do not burn.
- Serve Warm: Keep the pancakes warm in a low oven while you finish cooking the rest.
Notes
For variety, try adding berries, chocolate chips, or nuts to the batter. Store leftovers in the refrigerator or freezer as instructed.
