- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 1 tablespoon lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1/4 teaspoon baking powder
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13 inch baking pan by greasing it.
- Make the crust by creaming together butter and granulated sugar until light and fluffy. Gradually add flour and salt, mixing until just combined. Press dough into the bottom of the prepared baking pan.
- Bake the crust for about 20 minutes or until light golden brown.
- Prepare the filling by whisking together eggs, granulated sugar, lemon zest, lemon juice, and baking powder in a separate bowl until smooth.
- Combine the filling with the hot crust by pouring it over and return the pan to the oven. Bake for an additional 20-25 minutes until edges are set.
- Cool completely on a wire rack and dust with powdered sugar before serving.
Notes
For best flavor, use fresh lemon juice and zest, and let the bars cool completely before cutting.
