A delicious and nutritious banana bread packed with protein and rich chocolate flavor, perfect for breakfast or a snack.

- 3 large ripe bananas, mashed
- 2 large eggs
- ⅓ cup maple syrup or honey
- ¼ cup melted coconut oil or light olive oil
- 1 teaspoon vanilla extract
- 1½ cups whole wheat flour
- ⅓ cup vanilla or unflavored protein powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon fine sea salt
- ½ cup dark chocolate chips (70% cocoa, no added sugar)
- ¼ cup chopped walnuts or pecans, optional
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9 x 5 inch loaf pan by greasing it and lining the bottom with parchment paper.
- Mash the bananas in a large mixing bowl until smooth.
- Mix the eggs, maple syrup or honey, melted coconut oil, and vanilla extract into the mashed bananas.
- Combine the dry ingredients (whole wheat flour, protein powder, baking soda, baking powder, ground cinnamon, salt) in a separate bowl.
- Add the dry mixture to the wet mixture gradually, stirring gently until just combined.
- Fold in the dark chocolate chips and optional walnuts or pecans.
- Transfer the batter into the prepared loaf pan, optionally sprinkling extra chocolate chips on top.
- Bake for 50 to 55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Enjoy warm or at room temperature, can be served plain or with nut butter.
