Description

A delicious and nutritious banana bread packed with protein and rich chocolate flavor, perfect for breakfast or a snack.


Ingredients

  • 3 large ripe bananas, mashed
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • ⅓ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips (70% cocoa, no added sugar)
  • ¼ cup chopped walnuts or pecans, optional

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9 x 5 inch loaf pan by greasing it and lining the bottom with parchment paper.
  3. Mash the bananas in a large mixing bowl until smooth.
  4. Mix the eggs, maple syrup or honey, melted coconut oil, and vanilla extract into the mashed bananas.
  5. Combine the dry ingredients (whole wheat flour, protein powder, baking soda, baking powder, ground cinnamon, salt) in a separate bowl.
  6. Add the dry mixture to the wet mixture gradually, stirring gently until just combined.
  7. Fold in the dark chocolate chips and optional walnuts or pecans.
  8. Transfer the batter into the prepared loaf pan, optionally sprinkling extra chocolate chips on top.
  9. Bake for 50 to 55 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Enjoy warm or at room temperature, can be served plain or with nut butter.
