Ingredients

- 2 cups broccoli florets
- 2 medium apples, diced
- 1/4 cup sunflower seeds, toasted
- 1/2 cup plain yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Wash the broccoli florets under running water and cut them into bite-sized pieces.
- Wash the apples, remove the core, and dice them into small pieces.
- Toast the sunflower seeds in a small skillet over medium heat for about 3 to 5 minutes until golden and fragrant.
- In a bowl, whisk together yogurt, honey, lemon juice, salt, and pepper until smooth.
- In a large bowl, combine broccoli, diced apples, and toasted sunflower seeds. Pour the yogurt dressing over the top and toss gently.
- Cover and let chill in the refrigerator for about 30 minutes before serving.
Notes
Add shredded rotisserie chicken or chickpeas for extra protein. For optimal freshness, consume within 2 to 3 days.
