- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup flour (whole wheat or all-purpose)
- 1/4 cup honey or maple syrup
- 1/2 cup milk (or plant-based milk)
- 1 egg (or flax egg for vegan option)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas in a large bowl until smooth.
- Add the rolled oats, flour, honey or maple syrup, milk, egg, baking powder, baking soda, vanilla extract, and a pinch of salt. Mix until just combined.
- Divide the muffin batter evenly among the lined muffin cups, filling each about 2/3 full.
- Bake for about 15-20 minutes, checking for doneness with a toothpick.
- Cool the muffins in the tin for a few minutes before transferring them to a wire rack.
