- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a muffin tin by greasing it or lining it with muffin liners.
- Mash the ripe bananas in a mixing bowl until smooth.
- Add the melted butter into the mashed bananas and stir to combine.
- Mix in the baking soda and a pinch of salt.
- Incorporate the sugar, egg, and vanilla, mixing thoroughly.
- Add the flour gradually and mix until just combined.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Cool the muffins in the tin for a few minutes before transferring to a wire rack.
