Description

Authentic birria tacos are a traditional Mexican dish known for their rich flavors and tender meat, perfect for gatherings or a delightful dinner at home.


Ingredients

  • 2 lbs beef chuck roast
  • 1 lb lamb shoulder or beef shank (optional)
  • 4 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 onion, chopped
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp black pepper
  • 2 cups beef broth
  • 2 tbsp apple cider vinegar
  • Corn tortillas
  • Chopped onion and cilantro for serving
  • Lime wedges for serving

Instructions

  1. Toast the Peppers: Heat a dry pot over medium heat. Add the dried guajillo and ancho peppers. Toast for about 2-3 minutes until fragrant, being careful not to burn them.
  2. Soak the Peppers: Remove the peppers and place them in a bowl. Pour hot water over them and let soak for 15-20 minutes until softened.
  3. Make the Sauce: In a blender, combine the softened peppers, chopped onion, garlic, cumin, oregano, thyme, and black pepper. Blend until smooth, adding soaking water if necessary.
  4. Cook the Meat: In a large pot, heat oil over medium-high heat. Cut the meat into large chunks and sear until browned on all sides (about 5-7 minutes).
  5. Combine Ingredients: Pour the blended sauce over the meat. Add beef broth and apple cider vinegar; stir to coat the meat.
  6. Simmer: Reduce heat to low, cover, and simmer for 120-180 minutes until meat is tender. Stir occasionally and add more broth if necessary.
  7. Shred the Meat: Remove from heat and shred the meat into bite-sized pieces right in the pot, stirring it back into the sauce.
  8. Prepare the Tacos: Take a corn tortilla, fill it with shredded meat, and top with chopped onion and cilantro. Serve with lime wedges.

Notes

To serve birria tacos, provide bowls of chopped onion, fresh cilantro, and lime wedges for customization. Serve with consomé on the side for dipping.
