- 3/4 lb ground beef
- 1/2 head cabbage (shredded into bite-sized pieces)
- 2 carrots (shredded or thinly sliced)
- 3 green onions (sliced)
- 2 cloves garlic (minced)
- 1.5 tbsp ginger (freshly grated)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sriracha
- 1 tbsp brown sugar
- 1 tsp rice vinegar
- 1/2 tbsp cooking oil (grapeseed or vegetable)
- 1 tbsp sesame seeds (for garnish)
- Pinch salt (to taste)
- Pinch pepper (to taste)
Instructions
- Prepare the sauce: In a small bowl, mix together the soy sauce, sesame oil, sriracha, brown sugar, and rice vinegar. Set aside.
- Cook the ground beef: Preheat a skillet over medium-high heat. Add the cooking oil and then the ground beef. Cook for 2-3 minutes until browned.
- Add aromatics: Stir in the minced garlic and grated ginger. Cook for about 30 seconds until fragrant. Season the mixture with a pinch of salt and pepper.
- Add vegetables: Add the shredded cabbage and sliced carrots to the skillet. Stir and cook for about 3-4 minutes until the cabbage wilts and becomes tender.
- Combine everything: Drizzle the sauce over the beef and vegetable mixture. Toss everything to coat well in the sauce for about a minute.
- Serve: Plate the stir-fry on serving dishes. Garnish with sesame seeds and extra sriracha if desired.
Notes
Serve it over rice or noodles for a filling meal, or as is for a low-carb option.
