These Zucchini and Lemon Ricotta Bites are light, fluffy, and full of fresh flavor — the ultimate crowd-pleasing appetizer! With creamy ricotta, zesty lemon, and tender zucchini baked to golden perfection, they’ll wow your guests every time.
Ingredients
2 medium zucchinis, grated and squeezed dry
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
2 large eggs
1 lemon (zested and juiced)
1/2 cup breadcrumbs
1 garlic clove, minced
1 tbsp chopped fresh basil
Salt and black pepper to taste
Olive oil spray
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease or line a mini muffin pan.
2. Grate the zucchini and squeeze out as much liquid as possible using a clean kitchen towel.
3. In a large bowl, mix zucchini, ricotta, Parmesan, eggs, lemon zest, lemon juice, breadcrumbs, garlic, basil, salt, and pepper until well combined.
4. Spoon the mixture into the muffin cups, filling each about three-quarters full.
5. Lightly spray the tops with olive oil.
6. Bake for 18–20 minutes, or until the bites are golden brown and set in the center.
7. Cool slightly before removing from the pan, then serve warm or at room temperature.

Perfect as a party appetizer or light lunch!
Add a sprinkle of chili flakes for a little kick.
