- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 2 pieces fresh lemons (zest and juice)
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 2 tbsp olive oil

Instructions
- Chop the chicken breasts into bite-sized pieces.
- Cook the chicken in a large skillet with olive oil over medium heat for 6-7 minutes or until golden brown.
- Add the minced garlic and dried oregano. Cook for another minute.
- Stir in the orzo pasta until well-coated.
- Pour in the chicken broth and lemon juice, stir, and bring to a simmer.
- Cover the skillet and cook for 10-12 minutes until orzo is tender.
- Finish by stirring in lemon zest.
