Description

A fun and healthy way to enjoy chicken wrapped in whole wheat tortillas with fresh vegetables.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 whole wheat tortillas
  • 1 cup lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup shredded carrots
  • 1/4 cup low-fat ranch dressing or your favorite sauce

Instructions

  1. Wash the chicken breasts under cold water, then pat dry with a paper towel.
  2. In a bowl, mix together the olive oil, garlic powder, paprika, salt, and pepper.
  3. Rub the seasoning mixture all over the chicken breasts.
  4. Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for about 5 minutes, then slice into thin strips.
  6. Place a handful of chopped lettuce on a tortilla, followed by cherry tomatoes, cucumber slices, shredded carrots, and sliced chicken.
  7. Drizzle with ranch dressing.
  8. Fold in the sides of the tortilla and roll tightly from the bottom up.
  9. Repeat for the remaining tortillas and filling.
  10. Serve the wraps cut in half, optionally with a side of fresh fruit or salad.

Notes

Wraps are best served fresh. Store leftovers separately to maintain freshness.
