Description
A fun and healthy way to enjoy chicken wrapped in whole wheat tortillas with fresh vegetables.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 4 whole wheat tortillas
- 1 cup lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup shredded carrots
- 1/4 cup low-fat ranch dressing or your favorite sauce
Instructions
- Wash the chicken breasts under cold water, then pat dry with a paper towel.
- In a bowl, mix together the olive oil, garlic powder, paprika, salt, and pepper.
- Rub the seasoning mixture all over the chicken breasts.
- Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until internal temperature reaches 165°F (75°C).
- Let the chicken rest for about 5 minutes, then slice into thin strips.
- Place a handful of chopped lettuce on a tortilla, followed by cherry tomatoes, cucumber slices, shredded carrots, and sliced chicken.
- Drizzle with ranch dressing.
- Fold in the sides of the tortilla and roll tightly from the bottom up.
- Repeat for the remaining tortillas and filling.
- Serve the wraps cut in half, optionally with a side of fresh fruit or salad.
Notes
Wraps are best served fresh. Store leftovers separately to maintain freshness.
