Linzer cookies are a festive favorite during the holidays, featuring buttery almond shortbread sandwiched with sweet jam and dusted with powdered sugar. Their delicate texture, beautiful cutouts, and balance of nutty and fruity flavors make them an irresistible holiday classic.
Ingredients
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 large egg yolk
1 tsp vanilla extract
1/2 tsp almond extract
1 3/4 cups all-purpose flour
3/4 cup finely ground almonds or almond flour
1/4 tsp salt
1/2 cup raspberry jam (or your favorite jam)
Powdered sugar for dusting
Instructions
1. In a large mixing bowl, cream together butter and sugar until light and fluffy.
2. Add egg yolk, vanilla, and almond extract; beat until combined.
3. In a separate bowl, whisk together flour, ground almonds, and salt.
4. Gradually add dry ingredients to the wet mixture and mix until dough forms.
5. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 1 hour.
6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Roll dough to 1/8 inch thickness and cut out cookies using a round or fluted cutter.
8. Cut smaller shapes out of half of the cookies to create the tops.
9. Bake for 10–12 minutes or until edges are lightly golden.
10. Cool completely, then spread jam on the solid cookies and top with cutout cookies.
11. Dust tops with powdered sugar before assembling for a neat finish.
Notes
Use different jams like apricot or strawberry for variety.
Add a pinch of cinnamon to the dough for extra warmth.
Store in an airtight container for up to 5 days or freeze unfilled cookies for longer storage.
