Ingredients
1 cup almond flour
1 cup powdered sugar
3 large egg whites, room temperature
1/4 tsp cream of tartar
1/2 cup granulated sugar
1 tsp vanilla extract
For the Filling:
1/2 cup unsalted butter, softened
1 1/2 cups powdered sugar
1 tsp vanilla extract
1–2 tbsp heavy cream
Instructions
1. Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
2. In a bowl, sift together almond flour and powdered sugar.
3. In a separate clean bowl, beat egg whites with cream of tartar until soft peaks form.
4. Gradually add granulated sugar, beating until stiff, glossy peaks form.
5. Gently fold in vanilla extract, then carefully fold in the almond flour mixture until just combined.
6. Transfer batter to a piping bag fitted with a round tip.
7. Pipe small rounds onto prepared baking sheets, spacing slightly apart.
8. Bake for 18–20 minutes, until lightly golden and set.
9. Cool completely on the baking sheets.
10. For the filling, beat butter until creamy, then add powdered sugar, vanilla, and cream until smooth.
11. Sandwich cookies together with the filling and serve.

These cookies pair beautifully with coffee or tea.
You can flavor the filling with espresso, chocolate, or raspberry jam for variation.
Store assembled cookies in the refrigerator for up to 3 days.
