Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup green beans, trimmed and cut
  • 1 cup spinach or kale
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Cooked pasta (optional)
  • Grated Parmesan cheese (for serving, optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Allow it to warm up for a minute.
  3. Add the chopped onion, diced carrots, and diced celery to the pot.
  4. Sauté until they soften, about 5-7 minutes.
  5. Stir in the minced garlic, diced zucchini, and diced bell pepper.
  6. Cook for another 3-4 minutes until the vegetables start to soften.
  7. Pour in the diced tomatoes along with their juice, the vegetable broth, cannellini beans, and green beans.
  8. Sprinkle in the dried oregano and dried basil for added flavor.
  9. Increase the heat slightly and bring the soup to a boil.
  10. Once boiling, reduce the heat to a simmer and cook for 20-25 minutes until the vegetables are tender.
  11. Stir in the spinach or kale and cook until it has wilted.
  12. Season the soup with salt and pepper to taste.
  13. Serve hot, optionally adding cooked pasta and a sprinkle of grated Parmesan cheese on top for extra richness.

Notes

Customize with your favorite vegetables and enjoy with crusty bread or a side salad. Can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
