- 2 cups crushed graham crackers
- 1/2 cup sugar (for crust)
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar (for filling)
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 2 tablespoons sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- In a large bowl, combine the crushed graham crackers, 1/2 cup of sugar, and melted butter.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese with an electric mixer until smooth.
- Add 1 cup of sugar and 1 teaspoon of vanilla extract, and beat until creamy.
- Incorporate the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until the mixture is smooth.
- Pour the cream cheese mixture over the prepared crust.
- Bake for about 1 hour until the center is set but slightly jiggly.
- Turn off the oven and cool the cheesecake inside for 1 hour with the door slightly ajar.
- Refrigerate for at least 4 hours or overnight.
- Slice the strawberries and toss them with 2 tablespoons of sugar, letting them sit for 10 minutes.
- Top the chilled cheesecake with the sweetened strawberries and serve.
Notes
Serve with a drizzle of strawberry syrup or a dollop of whipped cream. Pairs well with coffee or tea.
