- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder

- ½ cup vegetable oil
- ½ cup buttermilk
- ½ cup hot coffee or hot water
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup granulated sugar
- ½ cup packed light brown sugar
- ¾ cup semisweet chocolate chips or chunks (plus extra for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
- Mix the vegetable oil, buttermilk, hot coffee (or hot water), eggs, vanilla extract, granulated sugar, and brown sugar until smooth in another bowl.
- Combine the wet and dry ingredients, stirring gently until just mixed.
- Fold in chocolate chips.
- Divide the batter among the muffin cups, filling each about two-thirds full.
- Bake for 18 to 22 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
