  • ½ cup buttermilk
  • ½ cup hot coffee or hot water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup semisweet chocolate chips or chunks (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  3. Mix the vegetable oil, buttermilk, hot coffee (or hot water), eggs, vanilla extract, granulated sugar, and brown sugar until smooth in another bowl.
  4. Combine the wet and dry ingredients, stirring gently until just mixed.
  5. Fold in chocolate chips.
  6. Divide the batter among the muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
