- 3 large overripe bananas, mashed (about 1 1/2 cups)
- 0.5 cup unsalted butter, melted and cooled
- 0.75 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 0.5 cup Dutch-process cocoa powder, unsweetened
- 1 tsp baking soda
- 0.5 tsp salt
- 1 cup semi-sweet chocolate chips, plus more for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix the mashed bananas and melted butter until well combined, then add the brown sugar, egg, and vanilla extract.
- Combine the flour, cocoa powder, baking soda, and salt in another bowl.
- Fold the dry mixture into the wet mixture using a spatula until just combined.
- Add the semi-sweet chocolate chips and pour into the prepared loaf pan, smoothing the top.
- Bake for about 55 to 65 minutes, checking for doneness with a toothpick.
- Cool the bread in the pan for at least 15 minutes, then transfer to a wire rack to cool completely.
Notes
Store the bread in an airtight container at room temperature for 3 to 5 days or freeze for 2 to 3 months.
