Description

  • 0.75 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup Dutch-process cocoa powder, unsweetened
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup semi-sweet chocolate chips, plus more for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix the mashed bananas and melted butter until well combined, then add the brown sugar, egg, and vanilla extract.
  3. Combine the flour, cocoa powder, baking soda, and salt in another bowl.
  4. Fold the dry mixture into the wet mixture using a spatula until just combined.
  5. Add the semi-sweet chocolate chips and pour into the prepared loaf pan, smoothing the top.
  6. Bake for about 55 to 65 minutes, checking for doneness with a toothpick.
  7. Cool the bread in the pan for at least 15 minutes, then transfer to a wire rack to cool completely.
