The Ultimate Carrot Cake is a moist, flavorful dessert enhanced with spices and cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter and lightly flouring them.
  2. Whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon until fully combined.
  3. Beat together the vegetable oil and eggs until smooth. Stir in the grated carrots and crushed pineapple.
  4. Add the dry mixture to the wet mixture and mix until just combined. If desired, fold in the chopped walnuts or pecans.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Cool the cakes in the pans for about 10 minutes, then remove and let cool completely on wire racks.
  7. Beat the softened cream cheese and unsalted butter until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until creamy.
  8. Place one layer on a serving plate and frost the top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
