Description
These Chocolate Chickpea Cookies are soft, fudgy, and surprisingly delicious — made with wholesome chickpeas for a protein- and fiber-packed twist on a classic cookie. Naturally gluten-free and secretly healthy, they’re the perfect guilt-free treat no one will guess is made with beans!
Ingredients
1 (15 oz) can chickpeas, rinsed and drained
1/2 cup creamy peanut butter or almond butter
1/3 cup maple syrup or honey
1/4 cup unsweetened cocoa powder
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Add chickpeas to a food processor and blend until completely smooth.
3. Add nut butter, maple syrup, cocoa powder, vanilla extract, baking powder, and salt.
4. Process until a thick, smooth batter forms.
5. Fold in chocolate chips.
6. Scoop 2-tablespoon portions of dough onto the prepared baking sheet.
7. Flatten slightly with the back of a spoon.
8. Bake for 10–12 minutes, until set but still soft in the center.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Make sure chickpeas are very well blended for the best texture.
Use dairy-free chocolate chips for a vegan version.
Store cookies in an airtight container in the refrigerator for up to 5 days.
