Ingredients
2 tbsp olive oil
1 large onion, chopped
3 garlic cloves, minced
2 carrots, sliced
2 celery stalks, chopped
1 red bell pepper, diced
2 medium potatoes, cubed
1 zucchini, sliced
1 cup green beans, trimmed and cut
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried basil
1/2 tsp smoked paprika
Salt and black pepper, to taste
1 cup kale or spinach (optional)
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté for 5 minutes until softened.
3. Stir in garlic, bell pepper, and potatoes; cook for another 3 minutes.
4. Add diced tomatoes, tomato paste, vegetable broth, thyme, basil, paprika, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
6. Add zucchini, green beans, and kale (if using); cook an additional 10 minutes.
7. Adjust seasoning to taste and remove from heat.
8. Ladle into bowls, garnish with fresh parsley, and serve warm.
