Ingredients
1 lb boneless, skinless chicken thighs (or breasts), cut into bite-size pieces
1 tbsp vegetable oil
1/3 cup soy sauce
1/4 cup honey
2 tbsp brown sugar
2 tbsp rice vinegar
2 cloves garlic, minced
1 tsp grated fresh ginger
1 tbsp cornstarch + 2 tbsp water (slurry)
2 cups cooked white or brown rice
1 cup steamed broccoli
1/2 cup shredded carrots
1/2 cup edamame (optional)
Sesame seeds and green onions for garnish
Instructions
1. In a small bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, garlic, and ginger.
2. Heat oil in a large skillet over medium heat.
3. Add chicken and cook until browned and cooked through, about 6–8 minutes.
4. Pour teriyaki sauce mixture into the skillet and bring to a simmer.
5. Stir in cornstarch slurry and cook until sauce thickens and coats the chicken.
6. Assemble bowls by layering rice, chicken, and vegetables.
7. Drizzle with extra sauce and garnish with sesame seeds and green onions.
Notes
For a healthier option, use low-sodium soy sauce or substitute coconut aminos.
