- 2 large sweet potatoes
- 1 cup cooked ground beef or turkey (or black beans for a vegetarian option)
- 1 cup diced tomatoes
- 1/2 cup corn
- 1/2 cup black beans (optional)
- 1 tablespoon taco seasoning
- 1 cup shredded cheese
- 1/4 cup diced onions
- 1/4 cup chopped cilantro
- Sour cream or Greek yogurt for topping (optional)
Instructions
- Preheat the oven to 400°F (200°C). Wash the sweet potatoes and poke several holes in each.
- Place the sweet potatoes on a baking sheet and bake for about 45 minutes, or until they are tender.
- In a skillet over medium heat, add the ground meat and cook for about 5–7 minutes until browned.
- Add diced tomatoes, corn, and optional black beans to the skillet, then sprinkle the taco seasoning and stir well.
- Cook this mixture for another 3–5 minutes until heated through.
- Once baked, let the sweet potatoes cool for a few minutes and then slice each open lengthwise.
- Fluff the insides of the sweet potatoes with a fork and spoon the taco mixture inside.
- Top with shredded cheese, diced onions, and chopped cilantro. Add sour cream or Greek yogurt if desired.
- Serve warm and enjoy!
