Taco Ranch Bites are the ultimate Tex-Mex finger food — crispy, cheesy, and bursting with zesty taco flavor! Perfect for parties, game days, or quick snacks, these bite-sized treats are loaded with seasoned beef, creamy ranch, and melted cheese.
Ingredients
1/2 lb ground beef
1 tbsp taco seasoning
1/4 cup water
1/4 cup ranch dressing
1/2 cup shredded cheddar cheese
1/4 cup diced tomatoes
1/4 cup chopped green onions
1 package (15-count) mini phyllo shells or tortilla scoops
Fresh cilantro or jalapeño slices, for garnish (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, cook ground beef over medium heat until browned; drain excess fat.
3. Add taco seasoning and water, stirring until well combined. Simmer for 2–3 minutes.
4. Remove from heat and mix in ranch dressing and shredded cheddar cheese.
5. Arrange mini phyllo shells or tortilla scoops on a baking sheet.
6. Spoon the taco mixture evenly into each shell.
7. Top with diced tomatoes and green onions.
8. Bake for 8–10 minutes, until cheese is melted and shells are crisp.
9. Garnish with cilantro or jalapeño slices before serving.
Notes
Swap ground beef for shredded chicken or turkey for a lighter version.
Add a dollop of sour cream or guacamole for extra flavor.
