These Taco Ranch Bites are the ultimate bite-sized Tex-Mex snack — crispy phyllo shells filled with seasoned beef, creamy ranch, cheese, and all your favorite taco flavors. Perfect for parties, game days, or a quick appetizer everyone will love!
Ingredients
1 lb ground beef
1 packet taco seasoning mix
2 tbsp water
1/2 cup ranch dressing
1 cup shredded cheddar cheese
1/2 cup diced tomatoes (drained)
1/4 cup sliced green onions
30 mini phyllo shells (frozen, pre-baked)
Sour cream and chopped cilantro for garnish (optional)
Instructions
1. Preheat oven to 375°F (190°C) and arrange phyllo shells on a baking sheet.
2. In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon.
3. Drain excess fat, then add taco seasoning and water; stir to combine and cook for 2–3 minutes.
4. Remove from heat and let the mixture cool slightly.
5. Stir in ranch dressing, cheddar cheese, diced tomatoes, and green onions.
6. Spoon about 1 tablespoon of the taco mixture into each phyllo shell.
7. Bake for 8–10 minutes until the cheese is melted and the shells are crisp.
8. Top with a small dollop of sour cream and sprinkle with chopped cilantro before serving.
Notes
Make the beef filling ahead of time and refrigerate — assemble and bake just before serving.
Swap ground beef for turkey or chicken for a lighter option.
These bites are best served warm but still taste great at room temperature for parties.
