Ingredients
2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
4 oz Brie cheese, sliced into small pieces
2 tbsp honey
2 tbsp dried cranberries, chopped
2 tbsp pecans, chopped and toasted
Fresh thyme or rosemary for garnish
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Arrange sweet potato rounds on the sheet and brush both sides lightly with olive oil.
3. Season with salt and pepper, then roast for 20–25 minutes, flipping halfway through, until tender and golden.
4. Top each warm round with a slice of Brie and return to the oven for 2–3 minutes until the cheese is slightly melted.
5. Remove from oven and drizzle with honey.
6. Sprinkle with cranberries, toasted pecans, and fresh herbs before serving.
Notes
Add a touch of balsamic glaze for a gourmet twist.
Substitute goat cheese for Brie for a tangier flavor.
