Ingredients
1 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
2 medium sweet potatoes, peeled and cubed
1 red bell pepper, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes
2 cups vegetable broth
2 tbsp tomato paste
1 tbsp chili powder
1 tsp smoked paprika
1 tsp cumin
1/2 tsp cinnamon (optional for warmth)
Salt and black pepper to taste
Juice of 1 lime
Fresh cilantro for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic; sauté until softened and fragrant.
3. Stir in sweet potatoes, bell pepper, and tomato paste; cook 2–3 minutes.
4. Add black beans, kidney beans, diced tomatoes, broth, and all spices.
5. Stir well, bring to a boil, then reduce heat and simmer for 25–30 minutes until sweet potatoes are tender.
6. Adjust seasoning to taste and stir in lime juice.
7. Serve hot, garnished with cilantro and your favorite toppings (avocado, tortilla chips, or sour cream).
Notes
For extra heat, add chipotle peppers in adobo sauce.
