- 1 lb boneless, skinless chicken breasts
- 1 cup sweet chili sauce
- 2 cups cooked brown rice or jasmine rice
- 1 cup broccolini or broccoli florets
- 1 red bell pepper, sliced
- 1 cup baby spinach
- 1 tablespoon olive oil
- Salt and pepper, to taste
- For the Coconut Lime Drizzle:
- 1/2 cup coconut milk
- Zest of 1 lime
- Juice of 1 lime
- 1 tablespoon honey
- Salt, to taste
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large pan over medium heat and cook the chicken for about 6-8 minutes until golden brown and cooked through.
- Pour in the sweet chili sauce and cook for an additional 2-3 minutes until thickened.
- Steam the broccolini and bell pepper for about 4-5 minutes until tender.
- Combine coconut milk, lime zest, lime juice, honey, and salt in a bowl for the drizzle.
- Layer the cooked rice, chicken, steamed vegetables, and baby spinach in a bowl.
- Drizzle coconut lime sauce over the top and serve immediately.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat with a splash of water to keep moist.
