Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Mix the flour, baking powder, baking soda, salt, and strawberry Jello mix in another bowl.
- Combine wet and dry ingredients, stirring gently to avoid overmixing.
- Fold in the chopped fresh strawberries.
- Prepare a baking sheet and drop spoonfuls of dough onto it.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool slightly before transferring to a wire rack.
- Serve warm or at room temperature, with whipped cream if desired.
