Description

A delightful dessert that blends sweet strawberries with tart rhubarb, topped with a crunchy crumble.

Ingredients

Scale
  • 2 cups strawberries, fresh or frozen
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the fruit mixture: In a large bowl, combine the strawberries and chopped rhubarb. Add the granulated sugar and cornstarch to the bowl. Mix well until the fruit is evenly coated.
  3. Transfer the fruit: Pour the fruit mixture into a baking dish, spreading it evenly.
  4. Make the crumble topping: In another bowl, mix together the all-purpose flour, rolled oats, brown sugar, melted butter, ground cinnamon, and salt. Stir until the mixture is crumbly.
  5. Apply the topping: Sprinkle the crumble mixture over the fruit in the baking dish.
  6. Bake: Place the dish in the preheated oven. Bake for 30-35 minutes or until the topping is golden brown and the fruit is bubbling.
  7. Cool and serve: Let the crumble cool for a few minutes before serving warm, preferably with a scoop of ice cream or yogurt on top.

Notes

For extra crunch, consider adding chopped nuts such as pecans or walnuts to the crumble mixture.
