- 2 cups fresh strawberries, hulled & sliced
- 2 cups rhubarb stalks, chopped
- ½ cup granulated sugar
- 1 cup all-purpose flour
- ¼ tsp ground cinnamon
- ¼ tsp salt
- ¾ cup rolled oats
- ¼ cup brown sugar
- ½ cup unsalted butter, cold & cubed
- ¾ cup whole milk (or buttermilk for extra tang)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the strawberries and rhubarb by washing, hulling, and slicing them.
- Mix the fruit filling in a bowl with sugar, flour, cinnamon, and salt.
- Let the mixture sit for about 10 minutes.
- Make the topping by combining flour, oats, brown sugar, cinnamon, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Assemble the dish by greasing a baking dish and layering the fruit mixture followed by the topping.
- Bake for 35-40 minutes until the topping is golden brown.
- Cool for 10 minutes before serving warm.
Notes
Serve warm with vanilla ice cream or whipped cream for an extra special treat.
