- 1 box strawberry cake mix, ingredients listed on the box (usually eggs, oil, and water)
- 1½ cups fresh or frozen strawberries (chopped)
- 1 cup white chocolate chips or chunks
- 1 cup sweetened shredded coconut
- ½ cup chopped pecans or walnuts (optional)
- 8 oz cream cheese (softened)
- ½ cup (1 stick) unsalted butter (softened)
- 2½ cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13-inch baking pan with cooking spray or butter.
- Layer the chopped shredded coconut, chopped strawberries, and nuts at the bottom of the pan.
- Make the cake batter according to the box instructions, mixing until smooth.
- Pour the batter over the layered ingredients in the pan.
- Prepare the cream cheese mixture by beating cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
- Add dollops of the cream cheese mixture over the batter and swirl gently.
- Top with white chocolate chips.
- Bake for 40–45 minutes, until the center is slightly gooey.
- Cool for at least 30 minutes before slicing.
Notes
For best flavor, serve warm or with whipped cream. Store leftovers in an airtight container.
