- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar (for topping)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
- Beat the cream cheese until smooth and creamy, then add sugar and vanilla extract.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cheesecake mixture over the crust and spread evenly.
- Bake for 55-60 minutes until the center is set and the top is golden brown.
- Cool the cheesecake at room temperature.
- Mix strawberries with sugar and lemon juice, letting sit for 10 minutes.
- Spread the strawberry mixture over the cooled cheesecake.
- Chill in the refrigerator for at least 4 hours before serving.

For a creamier texture, consider baking in a water bath.
