Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
  3. Beat the cream cheese until smooth and creamy, then add sugar and vanilla extract.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Bake for 55-60 minutes until the center is set and the top is golden brown.
  7. Cool the cheesecake at room temperature.
  8. Mix strawberries with sugar and lemon juice, letting sit for 10 minutes.
  9. Spread the strawberry mixture over the cooled cheesecake.
  10. Chill in the refrigerator for at least 4 hours before serving.
