- 1 cup fresh strawberries, chopped
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 package cream cheese (8 oz), softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package puff pastry (2 sheets), thawed
- 1 egg, beaten (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chopped strawberries, sugar, cornstarch, and lemon juice in a bowl and set aside.
- Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Roll out the thawed puff pastry sheets and cut into squares, about 4-5 inches in size.
- Place a spoonful of the cream cheese mixture in the center of each square, followed by the strawberry mixture.
- Fold the pastry square over to form a triangle, press the edges together, and crimp with a fork.
- Brush the tops with the beaten egg.
- Bake on a lined baking sheet for 20-25 minutes until golden brown.
- Cool slightly on a wire rack and dust with powdered sugar before serving.
