Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 package cream cheese (8 oz), softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chopped strawberries, sugar, cornstarch, and lemon juice in a bowl and set aside.
  3. Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Roll out the thawed puff pastry sheets and cut into squares, about 4-5 inches in size.
  5. Place a spoonful of the cream cheese mixture in the center of each square, followed by the strawberry mixture.
  6. Fold the pastry square over to form a triangle, press the edges together, and crimp with a fork.
  7. Brush the tops with the beaten egg.
  8. Bake on a lined baking sheet for 20-25 minutes until golden brown.
  9. Cool slightly on a wire rack and dust with powdered sugar before serving.
