Delightful cupcakes combining creamy cheesecake and sweet strawberries with chunks of white chocolate.

- 1 box strawberry cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar (for frosting)
- Fresh strawberries, for topping
- White chocolate, for chunks
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- Mix the strawberry cake mix, eggs, water, and vegetable oil in a large bowl until smooth.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the cheesecake filling by beating the cream cheese, 1/4 cup powdered sugar, and vanilla extract until smooth.
- Hollow out the cooled cupcakes to create space for the filling.
- Fill each cupcake with the cheesecake mixture.
- Make the frosting by whipping the heavy cream and remaining 1/2 cup powdered sugar until stiff peaks form.
- Frost the cupcakes with the whipped cream.
- Garnish with fresh strawberries and white chocolate chunks.
- Serve and enjoy!
