White Chocolate Strawberry Cheesecake Cupcakes

Description

Delightful cupcakes combining creamy cheesecake and sweet strawberries with chunks of white chocolate.


Ingredients

  • 1 box strawberry cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar (for frosting)
  • Fresh strawberries, for topping
  • White chocolate, for chunks

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Mix the strawberry cake mix, eggs, water, and vegetable oil in a large bowl until smooth.
  3. Fill the cupcake liners about 2/3 full with the batter.
  4. Bake for 18-20 minutes or until a toothpick comes out clean.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Prepare the cheesecake filling by beating the cream cheese, 1/4 cup powdered sugar, and vanilla extract until smooth.
  7. Hollow out the cooled cupcakes to create space for the filling.
  8. Fill each cupcake with the cheesecake mixture.
  9. Make the frosting by whipping the heavy cream and remaining 1/2 cup powdered sugar until stiff peaks form.
  10. Frost the cupcakes with the whipped cream.
  11. Garnish with fresh strawberries and white chocolate chunks.
  12. Serve and enjoy!
