Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons melted butter
  • ¼ cup granulated sugar
  • 16 oz full-fat cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare an 8×8-inch pan by lining it with parchment paper.
  3. Make the crust by mixing graham cracker crumbs, melted butter, and ¼ cup sugar until moistened. Press into the bottom of the pan.
  4. Bake the crust for 8–10 minutes and let it cool slightly.
  5. Mix the cheesecake filling by beating softened cream cheese, ½ cup sugar, eggs, and vanilla until smooth.
  6. Add the cheesecake layer by pouring the mixture over the cooled crust and smoothing the top.
  7. Prepare the strawberries by tossing them with 2 tablespoons sugar and lemon juice.
  8. Add the strawberry mixture over the cheesecake layer.
  9. Bake the bars for 35–40 minutes until the center is set with a slight jiggle.
  10. Cool the bars at room temperature, then refrigerate for at least 4 hours before serving.
  11. Slice and serve the bars chilled.

For best results, allow the cheesecake bars to chill completely before slicing to ensure firmness.
