- 1 ½ cups graham cracker crumbs
- 6 tablespoons melted butter
- ¼ cup granulated sugar
- 16 oz full-fat cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups fresh strawberries, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare an 8×8-inch pan by lining it with parchment paper.
- Make the crust by mixing graham cracker crumbs, melted butter, and ¼ cup sugar until moistened. Press into the bottom of the pan.
- Bake the crust for 8–10 minutes and let it cool slightly.
- Mix the cheesecake filling by beating softened cream cheese, ½ cup sugar, eggs, and vanilla until smooth.
- Add the cheesecake layer by pouring the mixture over the cooled crust and smoothing the top.
- Prepare the strawberries by tossing them with 2 tablespoons sugar and lemon juice.
- Add the strawberry mixture over the cheesecake layer.
- Bake the bars for 35–40 minutes until the center is set with a slight jiggle.
- Cool the bars at room temperature, then refrigerate for at least 4 hours before serving.
- Slice and serve the bars chilled.
Notes
For best results, allow the cheesecake bars to chill completely before slicing to ensure firmness.
