Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup chopped green onions
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Place diced potatoes in a large pot of salted water and bring to a boil over medium-high heat. Cook until tender, about 10-15 minutes.
  2. Drain and let potatoes cool completely.
  3. In a large bowl, combine sour cream, mayonnaise, lemon juice, salt, and pepper. Mix until smooth and creamy.
  4. Add cooled potatoes to the dressing bowl, then stir in chopped green onions and parsley.
  5. Gently mix everything to coat the potatoes without mashing them.
  6. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld.
