- 2 pounds potatoes, peeled and diced
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup chopped green onions
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Place diced potatoes in a large pot of salted water and bring to a boil over medium-high heat. Cook until tender, about 10-15 minutes.
- Drain and let potatoes cool completely.
- In a large bowl, combine sour cream, mayonnaise, lemon juice, salt, and pepper. Mix until smooth and creamy.
- Add cooled potatoes to the dressing bowl, then stir in chopped green onions and parsley.
- Gently mix everything to coat the potatoes without mashing them.
- Cover the bowl and refrigerate for at least 1 hour to let the flavors meld.
