- 4 flour tortillas (6 inches)
- 1 pound lean ground beef
- Salt and pepper (to taste)
- 1 tablespoon neutral oil (vegetable or canola)
- 4 slices American cheese (or preferred cheese)
- Diced onion (for topping)
- Dill pickle chips (for topping)
- Shredded iceberg lettuce (for topping)
- 1/4 cup mayonnaise (for sauce)
- 2 tablespoons pickle relish (for sauce)
- 1 teaspoon Dijon mustard (for sauce)
- 1 teaspoon sugar (for sauce)
- 1 teaspoon white vinegar (for sauce)
- 1/2 teaspoon paprika (for sauce)
- 1/2 teaspoon onion powder (for sauce)
- 1/4 teaspoon garlic powder (for sauce)
Instructions
- Divide the ground beef into 4 equal portions to create even patties.
- Season each portion generously with salt and pepper.
- Preheat your skillet over medium-high heat and add the oil.
- On the skillet, place a tortilla meat-side down and put one portion of seasoned beef on top. Smash the burger with a spatula.
- Cook until the bottom is golden brown, about 2-3 minutes. Flip the tortilla, add a slice of cheese, and cook until the cheese melts, about 1 minute.
- Repeat with remaining tortillas and beef.
- Mix mayonnaise, pickle relish, Dijon mustard, sugar, white vinegar, paprika, onion powder, and garlic powder in a bowl to make the sauce.
- Spread sauce on each taco and top with diced onions, pickle chips, and shredded lettuce.
- Serve hot and enjoy!

Experiment with different cheeses and additional toppings like avocado or spicy jalapeños for added flavor.
