  • 2 cups rice
  • Fresh parsley (for garnish)

Instructions

  1. In a slow cooker, combine olive oil, lemon juice, lemon zest, dried herbs, minced garlic, salt, and pepper.
  2. Place chicken breasts in the slow cooker, ensuring they are coated with the marinade.
  3. Pour in the chicken broth to keep the chicken moist.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is easily pulled apart.
  5. About 30 minutes before serving, add the rice and stir to combine.
