- 2 pounds (900g) beef stew meat, cut into bite-sized pieces
- 1 ½ pounds (680g) baby potatoes, halved
- 3 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)
- ½ cup (120ml) beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup carrots, sliced into chunks
- 1 cup mushrooms, halved
Instructions
- Season the beef by mixing it in a bowl with salt, black pepper, smoked paprika, and onion powder until well coated.
- Prepare the garlic butter sauce by mixing melted butter, minced garlic, olive oil, and parsley in a small bowl.
- In the slow cooker, layer the seasoned beef, baby potatoes, carrots, and mushrooms. Pour the garlic butter sauce, beef broth, and Worcestershire sauce over the ingredients.
- Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the beef is tender.
- Garnish with fresh chopped parsley and serve warm.
