  • 1 ½ pounds (680g) baby potatoes, halved
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)
  • ½ cup (120ml) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup carrots, sliced into chunks
  • 1 cup mushrooms, halved

Instructions

  1. Season the beef by mixing it in a bowl with salt, black pepper, smoked paprika, and onion powder until well coated.
  2. Prepare the garlic butter sauce by mixing melted butter, minced garlic, olive oil, and parsley in a small bowl.
  3. In the slow cooker, layer the seasoned beef, baby potatoes, carrots, and mushrooms. Pour the garlic butter sauce, beef broth, and Worcestershire sauce over the ingredients.
  4. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the beef is tender.
  5. Garnish with fresh chopped parsley and serve warm.
