Ingredients

  • 1 lb boneless chicken breasts
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1/2 cup buffalo sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, green onions, sour cream

Instructions

  1. Prepare your ingredients by chopping the bell peppers and onions, and mincing the garlic.
  2. In your slow cooker, add the boneless chicken breasts, kidney beans, black beans, diced tomatoes, and chicken broth.
  3. Add the bell peppers, onions, and garlic to the pot, then pour in the buffalo sauce and sprinkle chili powder, cumin, salt, and pepper.
  4. Stir all the ingredients together to ensure the chicken is submerged.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. After cooking, shred the chicken in the slow cooker and stir to combine.
  7. Ladle the chili into bowls and serve with optional toppings.

Notes

Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2-3 months. Adjust the buffalo sauce for desired spice levels.
