  • 3 lb beef short ribs (halal)
  • 1 tbsp olive oil (for searing)
  • 1 onion (sliced)
  • 3 cloves garlic (minced)
  • 1 cup beef broth (low-sodium if preferred)
  • 1/2 cup tomato sauce
  • 2 tbsp soy sauce (halal)
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Chopped parsley (for garnish)

Instructions

  1. Sear the short ribs in a skillet with olive oil over medium-high heat for 2-3 minutes on each side until browned.
  2. Prepare the crockpot by spreading the sliced onion and minced garlic at the bottom.
  3. Layer the browned short ribs on top of the onions and garlic in the crockpot.
  4. Mix the beef broth, tomato sauce, soy sauce, brown sugar, apple cider vinegar, paprika, dried thyme, black pepper, and salt in a bowl until combined.
  5. Add the sauce mixture over the short ribs in the crockpot, ensuring they are well coated.
  6. Cook on low for 8 hours or high for 4-5 hours until the ribs are tender.
  7. Check for excess fat on the surface of the sauce and remove it if needed. Garnish with chopped parsley before serving.

Notes

For best results, cook on low for tenderness. Can be served with mashed potatoes or salad.
