An easy and nutritious meal featuring tender chicken and colorful vegetables roasted together with a sweet and tangy honey garlic sauce.

- 1.1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 5 oz sugar snap peas, trimmed
- 5 oz asparagus, trimmed and cut into 2-inch pieces
- 1 small red onion, cut into wedges
- 7 oz baby carrots, halved lengthwise
- 4 tablespoons honey
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 tablespoon rice vinegar or apple cider vinegar
- 1 teaspoon freshly grated ginger
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley or cilantro
- 1 teaspoon toasted sesame seeds, optional
Instructions
- Preheat the oven to 425°F (220°C) and prepare a large sheet pan lined with parchment paper or aluminum foil.
- In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, ginger, rice vinegar, and black pepper until smooth.
- Add the bite-sized chicken pieces to the bowl and toss until coated. Optional: Let marinate for 10 minutes.
- Arrange the marinated chicken and sliced vegetables on the sheet pan in a single layer.
- Drizzle any leftover sauce over the chicken and vegetables. Gently toss to coat.
- Place the sheet pan in the oven and roast for 20-25 minutes, stirring halfway through. The chicken should reach an internal temperature of 165°F (75°C) when done.
- Once cooked, remove from the oven and garnish with fresh parsley or cilantro and toasted sesame seeds before serving.
Notes
For a heartier meal, serve over rice or quinoa. Store leftovers in an airtight container for up to 3-4 days.
