Instructions

  1. Sear the chicken: Pour olive oil into a skillet over medium-high heat, add chicken breasts, and sear until golden brown, about 4 minutes per side.
  2. Transfer to the crockpot: Move the seared chicken into the crockpot keeping the flavor intact.
  3. Cook onions and garlic: In the same skillet, sauté sliced onion and minced garlic for about 3-5 minutes until fragrant and translucent.
  4. Combine ingredients: Pour the onion and garlic mixture over the chicken in the crockpot.
  5. Mix the sauce: Whisk together chicken broth, soy sauce, honey, and Dijon mustard, then add smoked paprika, dried thyme, salt, and black pepper.
  6. Add sauce to the crockpot: Pour the savory sauce over the chicken and onions.
  7. Cook: Cover and set the crockpot to cook on low for 6 hours.
  8. Thicken the sauce (optional): Mix cornstarch with water and add to the crockpot 30 minutes before serving.
