- 2 tbsp Olive oil (for searing)

- 1/4 cup Honey
- 2 tbsp Dijon mustard
- 1 tsp Smoked paprika
- 1 tsp Dried thyme
- 1 tsp Salt (adjust to taste)
- 1/2 tsp Black pepper
- 2 tbsp Cornstarch (for thickening)
- 1/4 cup Water (for dissolving cornstarch)
- 1 tbsp Fresh parsley (chopped, for garnish)
Instructions
- Sear the chicken: Pour olive oil into a skillet over medium-high heat, add chicken breasts, and sear until golden brown, about 4 minutes per side.
- Transfer to the crockpot: Move the seared chicken into the crockpot keeping the flavor intact.
- Cook onions and garlic: In the same skillet, sauté sliced onion and minced garlic for about 3-5 minutes until fragrant and translucent.
- Combine ingredients: Pour the onion and garlic mixture over the chicken in the crockpot.
- Mix the sauce: Whisk together chicken broth, soy sauce, honey, and Dijon mustard, then add smoked paprika, dried thyme, salt, and black pepper.
- Add sauce to the crockpot: Pour the savory sauce over the chicken and onions.
- Cook: Cover and set the crockpot to cook on low for 6 hours.
- Thicken the sauce (optional): Mix cornstarch with water and add to the crockpot 30 minutes before serving.
- Garnish and serve: Sprinkle with freshly chopped parsley before serving.
